dwilson
How can I recreate the wonderful tea I had while in Iraq? Is there a particular brand or variety of tea that is the most popular? How is it flavored, besides with the sugar cubes? How much cardamom? Thank you for your wonderful site.
salim
Here how we do it at home.. Choose one with long rought losse tea.. You can find in any Mideast store.. Boil the water first in a bigger cattle.. Have another smaller tea pot. Have some hot water in the smaller pot with one tea spoon of losse tea. Put the small pot on the big one to have it "Takhdeer" by the steam on the bigger one. Keep it for 10-15 min. Be sure that the small put not be boiled .. "Watch it until the tea start to float on the water .." Have the the mix from both pots to the concentration you like.. Have a great Iraqi cube of tea.. As for the Suger cube, you can find in any ME store.
